A long aging season ensures beautiful aromas, and the altitude of 1,000 meters provides fine acidity. The family ages the wine “sur lie” in wooden barrels, which gives the wine extra structure and flavor. The wood is very fine and well integrated. Not a Spanish powerhouse, but a refined wine reminiscent of a Pouilly Fuissé.
Delicious with grilled lobster or prawn paella. Or serve the wine with a Northern Spanish Bacalao a Pil-Pil, cod from the Basque Country braised in olive oil with garlic.
