By using vineyards in Limoux, where it is cooler due to their location relative to the Pyrenees, the vineyards receive a considerable amount of cooling. Ideal, therefore, for Pinot Noir.
By harvesting at night, the grapes retain their freshness. After 10 days of fermentation, the wine ages for some time in wooden barrels.
Chill the wine lightly and serve at around 15 degrees. Delicious as an aperitif or with light meat dishes and poultry.
We tasted the wine with steak tartare as an intermediate course; highly recommended!
