Here in the south of Burgundy, Chardonnay always ripens a little more than in the northern part, and you can taste it. A little more apricot and even a hint of mango. But all very subtle. The vines are grown on limestone and clay soils, ideal for adding some tension to the wine. Father and son Pornay also avoid excessive use of oak or overly long sur lie aging. The wines are always aged in stainless steel until the spring after harvest, ensuring the wine remains fresh. The short sur lie aging gives the wine a little more roundness. Spotlessly clean, wonderfully generous, and versatile.
Serve the wine with oysters or goat cheese. Delicious with pan-fried white fish with a fresh or creamy sauce.
This wine is best enjoyed at a temperature of approximately 8-10°C.
