The grapes come from the Langhe, a beautiful wine region in Piedmont known for its elegant and characterful wines. For this wine, the Favorita grape is used, a local white variety that produces fresh, aromatic wines with a lively character.
The grapes are gently crushed and undergo a short maceration on the skins. Subsequently, alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 20°C. After fermentation, the wine ages for some time on the lees (sur lie), which provides extra softness and more structure to the wine.
Delicious to combine with cockles and mussels. Also an excellent match with fresh goat cheese.
