From the warm and sunny Languedoc region typically comes France's "entry-level" Chardonnay. These wines are often given vanilla notes using oak chips, mimicking barrel aging.
However, there are also wineries like Madeleine Saint Jean that aim to showcase the true characteristics of the Chardonnay grape. Pure grape expression. Without secondary influences.
This wine is therefore aged in stainless steel tanks. The cooler sea influences are also clearly noticeable here. The fine acidity gives the wine a lot of freshness, and harvesting at the right time ensures the fruit doesn't come across as overripe. The slight richness, juicy character, and fresh acidity give the wine a unique personality.
We like to serve this wine as an aperitif or with a salmon salad. Or with a main course such as chicken with lemon sauce or a classic quiche Lorraine.
